Favorite meatless recipe to share?
Company's coming.
Next Friday, the 8th, we have a special dinner guest. I can not serve Father meat, obviously.
I'd like to serve him something that doesn't smell up the house like salmon does...unless, maybe, it's a salmon quiche with a lovely salad?
Or perhaps a pasta dish?

A family favorite is the traditional Tuscan bean soup called Ribollita. It is simple and hearty, but if you've never made it before it might seem like a lot of work.
It's one of those soups that get better after a few days.
It's thick, dreamy and with a little bit of olive oil on top it's the best.

Our favorite no-meat Friday dish is New England clam chowder with hot crunchy bread and a salad. The recipe for the soup is in the McCormick and Schmick's (Restaurant) cookbook. Our priest loves it; I just cooked some today with extra to bring to him this Sunday. If you'd like the recipe let me know. Once you get everything cut up it takes very little time to prepare. The bread recipe is from a homemaking magazine I receive.
You are so lucky to have a priest who comes over for dinner. We travel an hour, sometimes more, for the TLM. Our priest is getting so old that now he has to have someone drive out (an hour from church) to pick him up for Mass--he could never make it to our home(I'm an hour the other way).
